Serves 4 – 5, as a side dish
Takes about 35 minutes

This colorful dish is very simple and easy to make.  It pairs well with a fancy dinner or merely with plain brown rice.

Ingredients:

1 lb asparagus, ends trimmed off and cut in half
2 yellow peppers, sliced into strips
2 tbsp sesame oil
3 tbsp soy sauce
1 tsp thai chili sauce (optional)
2 tsp sesame seeds

1. Preheat oven to 350 degrees.  Mix asparagus, sesame oil, soy sauce, and chili sauce (if using) in a baking pan.  Bake for 8 minutes.
2. Increase heat to 400 degrees.  Add peppers and toss well to coat in liquid.  Continue to bake for another 20 minutes.  Top with sesame seeds. Serve hot.
